Menu chosen for 2015 Building Better Healthcare Awards

The menu has been confirmed for the 2015 Building Better Healthcare Awards ceremony at The Brewery in central London on 4 November.

This year’s four-course meal begins with salmon tatiki with mirin and lime, pickled daikon, burnt spring onion, mirin sweet potato puree, yuzu, coriander dressing and crispy ramen noodles. For vegetarians, there is white leek and parsnip soup with a leek and parsnip crisp and a chardonnay horseradish cream.

For main course, meat-eaters will enjoy rump of lamb with pressed aubergine lasagne, hay-baked celeriac puree, and a spinach and red wine reduction. Alternatively, there is a meat-free dish tamarind-infused tofu with sticky rice cake, burnt cucumber, miso and katsu sauce.

All diners will end with a dessert of coconut parfait with pineapple sorbet, roasted pineapple, maple, toasted coconut, lime curd, and meringue nibs.

There will then be petit fours and tea and coffee, prior to the awards ceremony beginning.

Guests will drink a choice of Italian Montepilciano Monte Tessa red wine and Riesling Andre Scherer, Alsace white wine.

The judges are currently examining more than 200 entries to this year’s competition before choosing their winners. Following on from the success of the 2014 awards, the results will be announced at the awards ceremony itself. The judges can award more than one winner or highly commended entry in a category where more than one project is worthy of special merit. In the event there are two winners in a category the judges reserve the right not to award a highly commended prize. The judges also reserve the right to only award a winner or highly commended in a category where they feel there are not enough entries worthy of special merit
