Plans for the Building Better Healthcare Awards ceremony 2023 continue, with the announcement of the final menu for this year’s event.
To be held at The Brewery in central London on Wednesday, 1 November, the ceremony – marking the 25th anniversary of the industry-leading awards – will begin with a champagne reception before guests enjoy a three-course meal prior to the awards ceremony in which trophies will be handed out in 24 categories covering technology, design and build, patient environment, and estates and facilities management.
For meat eaters, the meal will start with beetroot and wasabi-cured salmon with smoked beetroot gel, spiced apple chutney, mooli and coriander remoulade, ginger pickled mustard seeds, and a dill cracker.
Vegetarians will be served salt-baked celeriac and beetroot with truffled cream cheese, truffle puree, nori and mushroom powder, and a toasted celeriac crumb.
The main course options are slow-cooked glazed beef cheek with truffled celeriac mash, caramelised shallots, prunes in port, pickled walnuts, and a watercress salad; or satay-baked aubergine with fermented chilli puree, Thai sweetcorn fritters, sesame-dressed napa cabbage, crispy noodles, a sesame, peanut, and kombu crumb, and coriander oil.

For dessert all diners will enjoy a dark chocolate and pear panna cotta with Williams pear gel, blackberry sorbet, maple cinder toffee, and edible viola flowers.
Wines have been chosen to compliment all the dishes, with a 2022 Spanish Rioja Verdejo (white) and a French 2022 Tapisserie IGP Pays d’Oc (red) available on the tables.
